I mean, let’s be real, the OG version isn’t hard or complicated, but if you’re like me and the mid-summer cooking slump has hit you hard, try this super simple version the next time you want a side salad that’s kind of special but totally simple. This is easy enough to whip up for a quick summer lunch too!

Easy Prosciutto and Melon Salad
Description
You guys, I made dinner the other night and got super super lazy and turned my CRISPY PROSCIUTTO AND MELON SALAD into an easy version. This isn’t a recipe, just a pretty darn good idea 🙂 .
Ingredients
- Good quality prosciutto, chopped
- Cantaloupe cut into bite-sized cubes
- Whatever lettuce you love/have on hand (arugula, spinach, Romain, etc).
- Feta cheese, crumbled
- equal parts good quality Dijon mustard and Extra Virgin Olive Oil
- salt and pepper to taste
Instructions
- Take as your cantaloupe cubes and wrap each one in a piece of proscuitto.
- In your salad bowl or on individual plates, add your lettuce and then top it with your prosciutto wrapped cantaloupe. Set aside.
- In a small bow, whisk together your EVOO and Dijon until it reaches the desired consistency. Add in a sprinkle of salt and pepper to taste.
- Drizzle your dressing over your salad, lightly toss and then sprinkle on your Feta cheese. Serve immediately.
Notes
This isn’t a recipe, it’s an idea! Depending on how many people you are serving depends on how much of each ingredient you need. You can even add more or less of something that you love/don’t love as well. For my salad dressing, I typically add a bit of Dijon to a bowl and whisk in my EVOO with a fork until it reaches my desired consistency. I sprinkle in a bit of salt and pepper to taste when I’m finished and pour over the salad. This is more of an idea than a specific recipe.

LOVE a good salad in the summer–whether it be a green salad or a pasta salad, I usually make your Mom’s corn salad year round and shared it with my hair dresser yesterday. Then she asked me if I had ever put pepperoni in my pasta salad, She said that she had been wanting to try it, but wasn’t sure—-So I also shared your Mother-in-Law’s pasta salad with her too. LOVE these 2 salads. Looking forward to trying this one.
