Panic is starting to set in.
There are only 4 more weeks left of summer for my kiddos.
Only 4 weeks left to cram everything fun into our days before we’re a slave to a school schedule. Four weeks left to fit in dentist appointments, have pool parties, go to the zoo, stay up late, sleep in late, wear pjs and swimsuits all day…someone hand me a brown paper bag to breathe into.
With all of the fun I need to fit into our remaining month of summer, we can’t be bothered with fretting over dinner. This week, we’re making super simple recipes that will keep us out of the kitchen and into the fun action with our families.

I love making my enchilada stacks because they’re so quick and simple and always a favorite in our house. This is my Tomatillo Spinach Enchilada Stack…and it’s yummy!
We use fajita steak to make our Mexican Paninis and it’s delicious! You could also substitute your favorite fajita chicken too.
How cute are my little Hot Fudge Sundae Bundt Cakes?!?! And they’re really simple too! My kids love anything with sprinkles and a cherry on top :).
