Happy Friday friends! Today, I thought I’d share with you one of my favorite little tricks.
Did you know that you can take each one of my 100 bundt cake recipes and make them into mini muffins?
For quick little snacks, small desserts or brunch items, I love to have mini muffins…and so I use one of my bundt cake recipes (this one was my Lemon Bundt Cake recipe) and just pour the batter into 2 (24 count) mini muffin tins and bake about 8 to 10 minutes. So easy!
You could also pour the batter into 2 (12 count) regular sized muffin tins and make larger muffins (or cupcakes if they’re frosted). Those would just need to bake more like 16 to 18 minutes.

I have one suggestion- so I like to look at both of your blogs, but when I click in one from the other, it opens in the same window, meaning I have to click back to get back to what I wanted to later on your other blog. Maybe you could set it to where it opens in a new window, so I can leave both of them open and easily toggle back and forth without losing my page. Ha! Big request- #yesiampicky

Thank you for this! I can NEVER get bundts to come out of my pan properly – they're always undercooked in the middle while the outsides are in danger of overcooking. This may be my solution!

I use your recipes all the time for cupcakes. I find that I end up making 30 rather then 24 though. I always have left over batter or cupcakes that run together if I only do 24. It works great when you have a classroom with more than 2 dozen and you need to make a treat.
When you make it with the mini tins do you have left over batter?

There might be a little batter left over when you're done. But you will certainly have enough for 48 mini muffins!

This is a great idea! I have the same problem as Mama Dean but your recipes taste so good. This seems to be a good way to still enjoy them without the textural issues I have had.
