Meal Planning Monday #55

Hello Monday.  
I’m starting to get the hang of this “having a kid in school” thing…wake up, school, activities, dinner, homework, bed, repeat.  Since there isn’t a lot of room in there for making dinner, I’m keeping things simple.  My family is ready to eat after their busy days…and I’m ready too.  Lots of yummy food, little fuss.

I’m starting our week off with my Quick Mexican Casserole.  This little recipe is always a crowd pleaser!
On this night, you can serve my French Onion Paninis by themselves…or serve them alongside this…
Sausage and Kale Soup.  (Or you can just eat the soup for supper one night too!).
My friend Heather gave me her recipe for this yummy Slow Cooker Balsamic Chicken and not only is it simple, it’s so yummy too!
I just love my Taco Pasta!  It’s a pasta supper with a Tex-Mex flair…fabulous!
Our bundt cake of the week would make the perfect sweet treat to any supper…
…it’s my Apple Butterscotch Bundt Cake :).  Hello yummy!
My mom’s BFF Bree gave me the recipe for her Fruit Crisp.  It’s so simple and easy to whip up on busy nights!
And for a simple breakfast, make my Pumpkin Cinnamon Rolls.  One of these cinnamon rolls plus a cup of coffee is all you need for a great day.

    Way ahead of you on the Mexican casserole! We were already planning that one for tonight…I make if almost weekly and we LOVE it! I think I'm going to try the balsamic chicken tomorrow! It looks yum! And the fruit cobbler!? Definitely going on my list too….great meal planning Monday!!

    Thank you so much for sharing your recipes! They are super convenient considering my day started at 6 and ended after 8. Popping the Easy Mexican Casserole into the oven for a bit when I got home made for an easy cleanup and happy boyfriend. His first question was "Is there more?" Thank you again!
