This week’s Meal Planning Monday is another easy one. In fact, it’s so easy that I use shrimp…twice. (Who doesn’t love shrimp during the summer?!) You can also sub frozen scallops for these recipes too!

For Taco Tuesday…my SPINACH JACK TACOS! These are crazy good, friends! If you haven’t baked a taco before, you are missing out!! Your family will love this supper!
We love corn and we love leeks, so we’re big fans of my LEEK & CORN SHRIMP PASTA! This recipe is a favorite at my house!
CHICKEN CAESAR RICE BOWLS for the win on Thursday! This recipe is pretty much all about assembling. Don’t you just want to assemble and go?
And wrap up your week with my CRISPY POTATOES AND SAUSAGE supper. Yum!
For dessert? My STRAWBERRY MARGARITA ICE CREAM PIE! It tastes like summer in every bite.
CHEESY EGG & BACON BITES are the quickest little breakfast. You can also freeze these and just pop them in the microwave on busy mornings. How simple is that?!
