I have been making a Strawberry Angel Food Cake for years and years (it’s my dad’s very favorite dessert), so this fall, I decided to mix and match it and make a pumpkin version. This was so unbelievably simple and really, really yummy! My kiddos ate this up!
Three little ingredients plus a dollop of whipped cream…done.
Shopping List
1 box of angel food cake mix, found with the cake mixes (select one that only requires you add water)
1 (15 oz) can of canned pumpkin (I used Libby’s)
1 1/2 tablespoons of cinnamon
Whipped cream to garnish
Preheat oven to 350 degrees. Grease (I used Pam) a 9×13 baking dish. Set aside.
In a mixing bowl, combine the box of angel food cake mix and pumpkin with an electric mixer. Once combined, beat in the cinnamon.
Pour batter into prepared baking dish and bake 25 to 30 minutes or until lightly browned on top and a toothpick inserted in the middle comes out clean.
Remove from oven, cut into squares and dollop with a little whipped cream and a sprinkle of cinnamon.
So simple, so yummy, so fall.

So excited to try this recipe!!! This summer, my husband was suddenly diagnosed with a very scary autoimmune version of Type 1 diabetes and my whole way of cooking had to change. We already were eating healthy, but even healthy had to be tweaked and baked items were one of the first things to go.
Now that he's doing better and we have learned some tricks, I know he can have a few baked treats and angel food is one of them. I can't wait to make this one we can all enjoy!

Do you still add the water that the angel food cake box requires or skip it and do the pumpkin instead?

I had company over and needed a fast dessert. I went to the store this afternoon and got the cake mix. I got a little nervous mixing it as 1-1/2 Tablespoons cinnamon seemed like a lot but I followed the recipe. This is really good! I made homemade whipped cream which made the cake even better. I sprinkled a tiny bit of pumpkin spice on the whipped cream which looked real pretty. I would totally make this again. The guests seemed to really like it as well. Thanks for the recipe!

You do not put the water in the mix. Follow the directions as is here and only use pumpkin. Enjoy!

Yes! You could make them in a muffin tin but I would only bake them about 8 to 10 minutes. Enjoy!
