Well, this little recipe will always be remembered fondly. Just a few days after we came home from China with Ashby, Smith asked if we could bake some muffins (he loves muffins!). When I asked what kind he wanted to make, he said…chocolate. So, I went through the pantry, grabbed a box of chocolate cake mix and two bananas and whipped up a batch of these with them….
This was my very first time to bake with Ashby :). From now on, when I make these muffins, I’ll remember this sweet time.
So…you should make these muffins too! My kiddos love them for an after school snack, as breakfast or as dessert at night. They’re just good…every single time. The fun part? You can mix and match this recipe. Instead of chocolate, you could use a spice cake mix or yellow cake mix too. Easy, delicious and a great recipe to make with your kiddos.
This is a blender recipe. Just use your blender (instead of your mixer) and go. This recipe yields one dozen muffins.

Shopping List
1 egg
1/4 cup butter, softened
1 cup of mashed bananas (about 1 1/2 or so)
1 box of chocolate cake mix
1 cup chocolate chips
Preheat oven to 350 degrees.
Line one (12 count) muffin tin with cupcake liners. Set aside.
Put your one egg, butter and mashed bananas in a blender. Blend until smooth. Pour your blender ingredients into a bowl and then stir in your cake mix and chocolate chips. The batter will be nice and thick. Divide the batter among the muffin tin.
Bake about 18 minutes or until a toothpick inserted into the center of one muffin comes out clean.
Remove from oven and enjoy.
My kids love it when I make a blender bread. They help me dump everything in and then love pushing the button. You don’t need to over blend (this isn’t a smoothie), just blend until everything is incorporated. These muffins freeze beautifully too! I’ll place them in a freezer bag and then pop them out and microwave them for 30 seconds after school.
