My kiddos go back to school this week and somehow, I managed to schedule us 4,876 appointments after school (must have be those darn March goals catching up with me). Needless to say, I need suppers that are fast and simple for our hectic week.

I love these Chicken Citrus Tostadas because they cook up in the slow cooker and are pretty much waiting on me when it’s dinnertime. Plus, they’re just light and fresh…not too heavy, yet full of flavor.

My kids love Provolone Stuffed Meatballs for dinner. Sometimes, we serve them over pasta and sometimes, we just serve them up with a big green salad. Meatballs are great for busy nights because you can make them any time that day and just pop them in the fridge on the baking sheet until you’re ready to bake. Sometimes, I’ll make them while I’m drinking my morning coffee before school and then later that night, stick them in the oven and dinner is about done. Simple!
Now that it’s almost Spring, grilled fish will become a weekly staple in the Shull house. I’m pretty sure our favorite way to enjoy it is in a Grilled Fish Taco.
And this pasta right here…is our family’s very favorite. We call it “summer pasta” because it’s light and we typically eat this when the weather is warmer instead of a heavy marinara based pasta. I think I officially named it Roasted Tomato and Sausage Pasta…but whatever you call it, you’ll love it.
And in honor of tomorrow being St. Patrick’s Day, our bundt cake of the week is…
