This bar came as the result of begging. Begging from my children. Sigh.
Peanut butter reigns supreme at our house and every time I start to make a bar, my two oldest go, “can it be peanut butter?”. Bless them. So, on this day, I said “sure” and thus this bar was born…and two happy kiddos licked beaters like it was the best thing ever :).
For the peanut butter people in your house…I give you Bar #82.

1 box of yellow cake mix
4 eggs
1 stick melted butter
1 box of powdered sugar (about 4 cups)
8 oz package of cream cheese, softened
1 cup creamy peanut butter
1 cup creamy peanut butter
Preheat oven to 350 degrees. Grease (I use Pam) one 9×13 inch pan. Set aside.
In a mixing bowl, combine cake mix, 2 eggs and melted butter. Spread in bottom of pan to form your “crust” layer.
In a second bowl, beat the powdered sugar, 2 more eggs, cream cheese and peanut butter until smooth with an electric mixer.
Spread cream cheese mixture on top of crust mixture.
Bake 35-40 minutes until edges are brown and center set (it will still be slightly wobbly in the middle).
Cool on counter 30 minutes, then refrigerate 2 hours up to 2 days.
Slice into bars and serve.

I can't get yellow cake mix over here. Would a regular vanilla sponge mix be OK?

I think this would be so yummy "mixed and matched" with a chocolate cake mix. Definitely nothing better than chocolate & peanut butter!
