Busy Weeknight Suppers

 I posted these recipes on my other blog the other day and thought they needed to be on here too.  In case you missed it, these are my favorite recipes to make during the busy spring season.  Between baseball, dance, homework, swim and everything else in between, these super suppers will make getting dinner on the table a breeze! 
Crock Pot Chicken Tacos are without the number one thing we make in the slow cooker during the spring and summer.  You just cook up your chicken and seasonings all day and then when you’re ready to eat, you add it with your favorite taco toppings. I love making this in the summer especially because my family gets a hot meal but my kitchen doesn’t get hot.
Andrea’s Pulled Pork is a game changer.  This is seriously the simplest recipe in the world (only 4 ingredients!) and it can be served a million different ways (we love it as a sandwich, in a taco and especially in a quesadilla!).
Sweet Corn Chili…yeah, so this is so good.  I mean really, your family will go nuts over this supper.

Italian Brisket Sanwiches are quick and easy to pull together on a busy night.  You can serve this brisket sandwich style or with a baked potato on the side. I love the sprinkle of Parm on my brisket.
Honey Mustard and Lime Chicken Tostadas cooks up in the slow cooker and then gets a fresh bit of flavor at the end with a little lime juice and chopped red onions.
Orange Marmalade Chicken Sandwiches are always a hit at my house!  This chicken mixture would be really good wrapped up in a flour tortilla too!
Pepperoni Pizza Soup is pizza in a bowl.  We make ours with pepperonis but you can add whatever pizza toppings your family loves instead.  
Balsamic Chicken with Rice is a recipe my friend Heather shared with me at gymnastics one day while we were watching our girls.  This is so simple and packs a great flavor. I love this over brown rice!

So there you have it!  Whenever it’s 7:00 AM and I already have my family’s dinner cooking away in the slow cooker, I feel like super mom.  No matter what happens during our day…at least I know that dinner is already done.

    What?  What?  Food on this blog?  You didn’t accidentally click on Mix and Match Mama…I’m talking about food on both blogs today.  
    The other day, I was texting back and forth with my girlfriend Lauren and we were talking about how this time of year, our slow cookers get used even more than they do in the fall and winter because we need dinner to be completely done by the time we get home from our kiddos’ after school activities (it’s baseball season…).  So, I thought today, I would share some yummy recipes that are ready to go as soon as your busy, hungry, ready to eat family walks in the door.  And bonus…if your family comes home and eats at different times, you can pull out some dinner at different times for each of them.  
    First things first…other than the coffee maker, our slow cooker gets used the most in our kitchen.  These aren’t boring old pot roast recipes, this is fresh food made fast thanks to the lovely slow cooker.  To see my post on slow cookers (which kind I like to use and ideas to maximize the flavor out of them, click here).
    It’s Monday friends, let’s conquer supper.

    Love this! I am always needing slow cooker recipes because I work at night so I like to be able to throw something the the crockpot that my family can eat for dinner while I am working. We are paleo so I will have to try to adapt some paleo versions of these! Thank you:)

    Yay! After a day of playing outside, and running in to realize I forgot to plan anything for dinner (EEK!! 4 children with no food at dinner time = not good. Lots of complaining. Lots of goldfish. Ending in hotdogs and chicken nuggets. :/ And moms dinner of popcorn!) – I needed this! I forgot how great the slow cooker is now, so we can play all afternoon, and dinner will still be ready. And we can all be saved from the drama of hungry littles πŸ˜‰

    Oh the busyness! Thanks for the suggestions. I am not great at crockpot cooking (I constantly burn things) but going to try again! My daughter is beginning competitive gymnastics, which means 2 nights a week she will miss dinner if I don't have ready when she gets home from school.
