Pink Lemonade Bars…Kensington was all over this.
It’s so hard to believe that I’m already on bar #89! It feels like yesterday that I was working my way through bundt cakes and now, I’m about to wrap up two years of working on bars. After this, we have the final 10 and then it’s over for the bars.
Now, what’s the only thing that makes lemon taste better? Adding a little pink. There’s just something about that pink lemonade combination that says happy summer.

Shopping List
1 box of lemon cake mix
4 eggs
1 stick melted butter
1 box of powdered sugar (about 4 cups)
8 oz package of cream cheese, softened
1 tablespoon of lemon zest
2 tablespoons of lemon juice
a drop or two of pink food coloring
2 tablespoons of lemon juice
a drop or two of pink food coloring
Preheat oven to 350 degrees.
Spray (I use Pam) a 9×13 inch pan. Set aside.
In a mixing bowl, combine cake mix, 2 eggs and melted butter. Spread in bottom of pan to form your first layer.
In a second bowl, beat with electric mixer, powdered sugar, 2 more eggs, cream cheese, lemon zest and lemon juice until smooth. Mix in food coloring until. Spread this layer on top of first layer.
Bake 35-40 minutes until edges are slightly brown and center set (it will still be slightly wobbly in the middle).

Such a fun Neiman Marcus Bar Recipe! I've made these before and they come out amazing! You can actually find Pink Lemonade cake mix – it's a Pillsbury summer flavor!

Here is my favorite bar for you to try sometime… You may have tried it and I missed it. This is so very simple yet so, so good. People ALWAYS ask me for the recipe! I think they're called "Neiman Marcus Brownies" but they seem like Blondies to me– or butter pecan bars. Crust: 1 pkg butter pecan cake mix, 1 egg, & 1 stick butter. Mix & press. Topping: 2 eggs, 1 stick butter, 1 pkg pow sugar, 8 oz cream chz, chopped pecans sprinkled on top. Bake 55 min. Try it sometime 🙂
