Is there anything better than waking up on a Monday knowing that it’s a four day week? Woohoo for a nice three day holiday weekend!
Today’s recipes are what you should make at the beginning of the week…and then tomorrow, I’m going to show you what you should make for your Independence Day weekend. I don’t know about you…but food plays a MAJOR roll in our July 4th celebration!
So, here you go…what you should be eating Monday through Thursday (with a bonus bundt cake thrown in for good measure!).

Sweet Corn Chicken Tostadas…thanks to the slow cooker, this is a super simple supper!
I would serve my Lettuce Wrap Pasta Salad as a vegetarian supper…but if you have too many carnivores in your family, you could always serve it alongside grilled chicken or fish too.
My easy little version of a Croque-Monsieur…basically, a ham and cheese sandwich. This plus some veggies and your family has a quick and yummy weeknight meal without a lot of fuss.
It’s a Pizza Burger…and my kids think they’re awesome. Add you favorite toppings to this Italian flavored patty…we like pepperoni, tomato, fresh mozzarella and basil. A pizza…burger. You’ll love it!
And it wouldn’t be the Monday before July 4th if this wasn’t our bundt cake of the week…
It’s a blueberry bundt cake with fresh strawberry buttercream frosting on top.
