This week, I decided to make everything “two for one”. Each day is going to build on the next with a little two for one recipe. Let’s make this week easy. Don’t we all need a little simplified in our life on a Monday? I know that I sure do!

You can absolutely spread mashed potatoes on top instead of sweet potatoes…but we love, love, love sweet potatoes around here. Plus, if you make a double batch a few nights before, you’ll be able to assemble this in no time!
And since this is the last week of September, I feel like we should really maximize our apple consumption. Buy a lot of apples and then use them in some of my favorite breakfast, snack and dessert recipes…
Apple Bacon Pancakes just cannot be topped for breakfast. These are nothing short of life changing ;).
My Apple Cinnamon Muffins make a great lunchbox addition, after school snack or even breakfast too.

We could eat brisket everyday around our house, so that is definitely happening this week! And I feel crazy for never having Shepherd's Pie! My hubby would love that, so there's another one happening! I planned to try just one apple recipe, but how do you choose between those three?! Those muffins are a perfect snack and magic bars are always a good idea! Can't beat Saturday morning pancakes either! Thanks for sharing Shay!!

Hi Shay! I love following your blog! I am a big fan of baking and this weekend I made a bar/cake that made me think of you; one because it was super simple & super yummy and two because I know your love of anything fall/pumpkin/spice 🙂 Maybe you have made it before & I missed it on your blog but if not, here's the recipe:
1 box spice cake mix
1 can pumpkin
Frosting: 3 oz cream cheese (softened), 1 tsp vanilla, 1 tbsp milk, 2-3 cups powdered sugar
Mix dry spice cake mix with one can of pumpkin. Spread in greased 9×13 cake pan. Bake as directed on cake mix box. Mix up frosting ingredients while cake is baking. Once cake has cooled, frost & enjoy! Yummy!
