‘Tis the season for pies!
Every Thanksgiving, my family has no less than four pies for dessert…and every year, one is always pecan. This year, I thought I’d make a Chocolate Pecan Bourbon Pie. Big chocolate chunks, a splash of bourbon and gooey pecan pie mixed together. The pie in itself is a reason to be thankful.
Enjoy!
This recipe makes one 9″ pie.
Shopping List
1 uncooked pie crust (either store bought or homemade)
1 1/2 cups chopped pecans
3 eggs, lightly beaten
1/2 cup sugar
1/2 cup brown sugar
1 cup light Karo Syrup
1 tablespoon of bourbon
1 cup of chocolate chunks (found next to the chocolate chips)
1 cup of chocolate chunks (found next to the chocolate chips)
Preheat oven to 325 degrees.
Fit your pie plate with your uncooked crust. Set aside.
In a clean skillet over medium-high heat, toast up your pecans just a minute or two. Remove from heat.
In a large mixing bowl, combine your eggs, sugar, brown sugar, Karo Syrup and bourbon with a spoon. Stir in your toasted pecans and chocolate chunks. Pour pecan mixture into your prepared pie plate and bake 50 to 55 minutes or until the crust is lightly brown and the center is pretty set.
Remove from oven and allow to cool at least an hour before slicing and serving. If you’re serving this pie later in the day or the next day, store in the refrigerator until you’re ready to slice and serve.

This is one of my all-time favorite pies! The trick is to put the chocolate chunks (or chocolate chips) in the bottom of the pie crust, and then pour the mixture with the pecans over top. It is a game-changer for the texture of the pie! Try it – it won't disappoint! 🙂

Would you have to change any of the other ingredients if you leave the bourbon out?

I want to make this pie for Thanksgiving and I need to use a gluten free pie crust, and I think they are all precooked. any idea how to adapt for a premade crust?

When I made this I left it in the oven for about 1 hour and 15 but it was still pretty liquidity. Would you add corn syrup? Or something else? Less corn syrup? It was still tasty but I wanted it to hold the shape better.
