Happy Monday friends!
This time of year is my very favorite to be in the kitchen. I love that it’s dark outside while I’m making dinner, I love that the weather is cooler which means the food gets warmer. I love the coziness of it all. I know it’s only November 9, but in my kitchen tonight, there will be Christmas music playing and cozy food cookin’. ‘Tis the season!
And speaking of Meal Planning, if you haven’t heard yet…I have two cookbooks out on February 1. One of them is actually called Meal Planner. I take all four seasons and give you two weeks worth of recipes plus pantry staples, tips and tricks to help you meal plan all year long…
My second book is Cakes…that’s right, one book dedicated to my 101 Bundt Cakes. This book is also broken down seasonally so that no matter what the occasion, you’ll have an easy and delicious cake to celebrate.

Alrighty, on to our meals for the week!
A reader named April asked me if I could do one slow cooker meat and then use it later on in the week, so I thought, why not suggest that you guys make a triple batch of chicken in the slow cooker and then let’s use it three different ways? Easy, right?! Thanks April for the suggestion!
For the first three recipes, you’ll need to make a triple batch of my perfect chicken in the slow cooker. All you will do is add about 3 pounds (one pound per night, more if you’re serving more than 4 each night) of chicken breasts to your slow cooker and then cover with water. Pop the lid on and let the chicken cook away on low all day in your slow cooker. After 6 to 8 hours, remove chicken, discard water, shred and then divide out for the next three recipes. Easy!
Enchilada Suizas are one of my favorite Tex-Mex inspired dishes! There is Swiss cheese inside of these enchiladas. Swiss. Cheese.

On night #2, you’re going to use that chicken and build Chicken Parm Sloppy Joes. These are always such a big hit in my family!
And nothing says cozy mid-week meal like Chicken Pot Pie. I love.
After you’ve done chicken this week, how about a big bowl of this for supper…
And round out your week with my Mexi Beef over Rice.
Oh my word! Our bar this week is Pecan Pie. You’re either a pecan pie person or you’re not. If you are, this one’s for you!
One last little breakfast recipe for your week…

Have you ever shredded your chicken in a kitchen aid? It is super easy! All you do is place it in the bowl and using the paddle attachment, turn it on low and mix until it is shredded! It is so easy!
