I’m always looking for ways to jazz up a holiday breakfast, so I thought some Mint Chocolate Waffles would be the perfect accompaniment to St. Patrick’s Day. I’ve done Green Pancakes before, so I thought this time, fun waffles. If you’re a mint chocolate girl, this recipe is for you. Enjoy!
This recipe will yield enough batter for four big Belgian waffles or 8 smaller waffles. If you can’t find Andes Baking Chips, see below for a substitution.
3 tablespoons cocoa powder
Maple Syrup, optional
So, I find these Andes Baking Chips on my baking aisle next to the chocolate chips year around. That being said, if you can’t find them, you can always add in one teaspoon of peppermint extract to the wet ingredients and then stir in chocolate chips instead. Same great flavor combination!
