Um, so I made this little panini for lunch the other day and it rocked my world.
There is this one particular kind of hummus that has a little apricot in it…so I took that idea and turned it into this yummy panini with apricot preserves, spinach, yellow bell pepper and hummus. Bonus, if you’re not trying to make this vegetarian, you can always throw on some bacon. I added two slices of turkey bacon to mine…and it was fantastic!
A little lunch recipe for your Wednesday. Enjoy!
This recipe makes one sandwich.
Shopping List
Two slices of good quality bakery bread (I used Jewish Rye)
about two tablespoons of apricot jam
about two tablespoons of your favorite hummus
four slices of yellow bell pepper
a handful of spinach leaves
2 slices of bacon, cooked to crisp, optional
Preheat your griddle or a large skillet to medium-high heat. Lightly spray with cooking spray.
Take one slice of bread and spread your apricot jam across. Take your second slice of bread and spread your hummus across. Add your sliced bell pepper, spinach and bacon to one slice of the bread and top with the other.
Add your sandwich to your hot griddle or skillet and lightly press down with a spatula. Cook your first side about three minutes before flipping your sandwich and cooking the second side about three minutes too.
After your panini is heated through, remove to your plate, slice and enjoy.
A quick little lunch that is so much better than another boring old salad.

Oh my… this sounds heavenly!! I'm curious what the hummus was that had a little bit of apricot. I'm always looking for a new hummus to try!
