
We are going TROPICAL for breakfast on this Friday, friends!
Mades likes to make her school lunches using Hawaiian rolls as the bread for her turkey sandwiches, so I’m always buying them for our pantry. One day, as I was putting them in my cart, I picked up an extra package because I thought they would make an EXCELLENT breakfast casserole base. Then, I started thinking, “why not make it Hawaiian?”. And thus, this recipe 🙂 .
I typically add protein to my breakfast casseroles, but for this one, I kept it sweet instead of savory. If you love pineapple, coconut, and macadamia nuts, this recipe is for you. It pairs perfectly with a cup of coffee in the morning.

Hawaiian Breakfast Casserole

Description
A breakfast casserole that will make you feel like you’re on a tropical vacation. If you love pineapple, coconut, and macadamia nuts, this recipe is for you. It pairs perfectly with a cup of coffee in the morning. Aloha! xx
Ingredients
- 1 package of Hawaiian rolls (typically 12 slider-sized rolls), torn into bite-sized pieces
- 6 eggs
- 2 cups of milk
- 1 teaspoon vanilla
- 1 (8 oz) package of shredded, sweetened coconut
- 1 (20 oz) can of crushed pineapple, drained
- about 2 cups of macadamia nuts (lightly salty is great!)
Instructions
- Preheat your oven to 350 degrees.
- Lightly spray a 9×12 baking dish. Spread your bite-sized pieces of torn Hawaiian rolls all over the bottom of your baking dish. Set aside.
- In a mixing bowl, whisk your eggs together. Next, whisk in your milk and vanilla. Stir in your coconut, crushed pineapple, and macadamia nuts. Pour this mixture all over your bread.
- At this point, you can cover and refrigerate until you’re ready to bake (up to 24 hours) or pop it immediately into the oven.
- Bake about 35 to 40 minutes or until lightly browned on top and the center of the casserole is set (not wobbly). Remove from oven and let set five minutes before slicing and serving.

I buy them at Trader Joe’s! They price their bulk nuts SO WELL! It’s pretty much the only place I buy nuts and cheese.

I cannot wait to make this recipe because it sounds delectable but I have to say I’m always hesisitant about Hawaiian rolls. True story: had a pack on my kitchen counter for months and when I opened them (and used them) not a spec of mold and still so good😂🤪😋

Any chance you could work on creating one that uses those lovely rolls but is savory?? I am a 66 year old grandma and I can alter recipes to add things or leave things out I like or don’t like so much but I’m drawing a blank on how to yummy this up to a warm heat… My daughter and son in law have church youth groups spend the night or the weekend for retreats and this would make a great sweet casserole but I’d love a savory choice too.
I know it’s not like you don’t have enough to do.

THIS SOUNDS GOOD FOR EASTER SUNRISE BREAKFAST. HOW WOULD THIS BE MADE THE NIGHT BEFORE AND WARMED WHEN WE GET TO CHURCH. WOULD YOU WARM IN THE OVEN –DON’T KNOW IF THERE IS A MWO THERE. WE HAVE TO TRAVEL ABOUT 45 MIN.

I would bake it when you’re ready to enjoy it. Make it and pop it in the fridge and then bake right before serving.

It sounds great, looks very good. Can I NOT put macadamia nuts in it? I don’t like them. If I don’t add the nuts will it subtract from the recipe, will it still be tasty?
