This is one of my favorite little go-to salads for lunch or a side. It’s easy and full of flavor. Win, win, right?! You can even throw some grilled shrimp on top and make it an entree. Now, isn’t that simple? I make my own honey mustard dressing here…but you most certainly can use a store bought variety.
This recipe serves four.
about four cups of fresh spinach
½ a red onion, chopped
1 avocado, seed removed and chopped
1 large orange, peeled and sectioned
1 tablespoon Dijon mustard
3 tablespoons honey
about 1/2 cup Extra Virgin Olive Oil (EVOO)
salt and pepper
Assemble your salad with fresh spinach, some chopped red onion, chopped avocado pieces and sectioned oranges. Set aside. In a small bowl, whisk together your Dijon and honey. Next slowly whisk in your EVOO. Whisk in a pinch of salt and pepper. Drizzle your dressing over your salad.
Enjoy solo or add as a side to something yummy…perhaps to this…
