Mmmmmm…sweet potato fries are our love language. In fact, that’s how Andrew gauges a restaurant…if they have sweet potato fries, they’re excellent…if they don’t, they’re not ;). He’s easy to please. #aslongasyouhavesweetpotatofries
So, since we’re sweet potato fry enthusiasts, we often make them as a side at our house. Not going to lie…I think I’ve perfected the art of making them. Bonus…I can also whip up a quick (and delicious!) dipping sauce that is spicy (which counters the sweetness of the fries) and creamy (which counters the crunchy of the fries). Win, win.
Make these with your favorite burger…perhaps my Gorgonzola and Grilled Peach Burger? Yum.
This recipe is easily doubled or cut in half. I have enough here to serve four…but as you can see, it’s easy to play around with.
Shopping List
2 large sweet potatoes, cut into slivers (we like to leave the skin on but you can peel it first!)
several large drizzles of Extra Virgin Olive Oil (EVOO)…around 1/4 cup
2 tablespoons of chili powder
big pinches of sea salt (or Kosher salt)
big pinches of pepper
about 1½ tablespoons of sugar
1 (8 oz) container of sour cream
3 chipotle peppers in adobe sauce, chopped
about 6 green onions, chopped
Preheat oven to 425 degrees.
Line a baking sheet with foil (for easy clean up!) and lightly spray with cooking spray.
Place all of your sweet potato slivers on your baking sheet and then liberally drizzle your EVOO down on top. Toss them and coat. Sprinkle on your chili powder along with big pinches of both sea salt and pepper. Toss everything once more and then pop it in your preheated oven.
Roast your fries about 15 minutes before quickly opening the oven and tossing them around one time. Place right back in oven and continue roasting about another 15 minutes more (or until browned and crunchy looking!). Remove from oven and immediately sprinkle the hot fries with sugar.
Serve hot.
Now, to make your sauce, you combine in a bowl your sour cream, chopped chipotle peppers (just remove them from the can of chipotle and adobe sauce and chop them up on your cutting board), green onions and another pinch of salt and pepper. Stir everything together with a spoon and serve immediately or refrigerate until you’re ready to enjoy.
Dunk your fries in your sauce and enjoy.

We make sweet potato fries at least once a week. My suggestion is substitute the chili powder with paprika and use the sea salt. Yum! Now I need to try the dipping sauce!
