Every week, I bring breakfast for my Sunday school class. Over the years, these sweet people have sampled everything I make and they always give me their opinions…and over and over again, when they make requests, it’s for my Bacon & Tot Casserole. So instead of making it yet again, I tweaked it a little bit and made this Sausage & Tot version…with onions and provolone. It went over really well! This makes a great weekend breakfast or even a fun weekday supper too! Enjoy!
This recipe serves about eight.
Shopping List
1 (32 oz) package of frozen tater tots
1 pound of breakfast sausage, browned and crumbly (you can use pork or turkey)
8 eggs
1 onion, chopped
1 cup of shredded Provolone cheese
salt and pepper
Preheat oven to 350 degrees.
Grease a 9×13 baking dish (I uesd Pam).
Spread your frozen tots down across the bottom of the baking dish followed by your cooked and crumbly browned sausage. Set aside.
In a mixing bowl, whisk together your eggs. Next, stir in your onion, cheese and a big pinch of both salt and pepper. Pour this egg mixture down over the top of your casserole.
Bake uncovered about 35 minutes or until browned and bubbly.
Remove from oven and serve immediately.
This casserole is a winner! Your friends and family will love it!
