Just in case you need a recipe for Thanksgiving leftovers today 🙂 .
You can make as many of these as you want…you can even make just one!
Shopping List
“burrito sized” flour tortillas
turkey
cranberry sauce
a few thick slices of cheese (I used white cheddar)
chopped green onions
Preheat your indoor griddle or a big skillet to medium-high heat. Spray lightly with cooking spray.
Lay out your tortillas. Place turkey across the bottom half of each tortilla. Add a big dollop of cranberry sauce, a few slices of cheese and a few chopped green onions to each one. Fold the top part down to cover the bottom portion.
Place each quesadilla in your skillet one at a time. Brown on both sides (about 4 minutes or so each side). Remove once browned up and slice in half (to give you two quesadillas). Repeat with your other tortillas.

No cranberry sauce on hand, so I’ll substitute salsa instead. To really go with the turkey day theme, this might be fun with stuffing, or some leftover kabocha squash and cheese… now I’m making me hungry.

I just made them for lunch and they were a HUGE hit!!! I made mine with cheddar, my husband’s with leftover herbed Brie, one with plain Brie and one with St. Angel! All were delicious melted with the turkey and cranberry sauce! Thanks for another great idea!!
