If you’re looking for a side dish this holiday season, you should try my Crunchy Bacon & Cheese Corn Casserole! It’s simple to pull together and will be gobbled up in seconds. Enjoy!
This recipe makes on 9×13 baking dish casserole.
Shopping List
2 (12 oz) packages of frozen corn
2 (4 oz) cans of chopped green chiles
2 cups of shredded Cheddar cheese
4 pieces of cooked bacon, crumbled
about 8 green onions, chopped
2 eggs
1/4 cup flour
1 teaspoon chili powder
a good pinch of both salt and pepper
1 sleeve of Ritz crackers, finely crushed (I used my food processor)
1 stick of butter, melted
Preheat your oven to 350 degrees.
Lightly grease a 9×13 baking dish with cooking spray. Set aside.
In a mixing bowl, stir together your corn, chiles, cheese, bacon crumbles, green onions, eggs, flour, chili powder, salt and pepper. Stir together with a wooden spoon until everything is coated. Pour this mixture across your prepared baking dish. Next, sprinkle your cracker crumbs evenly down over the top. Finally, pour your melted butter down over everything.
Place your casserole in the oven and bake 25 to 30 minutes. Remove from oven and serve immediately.
That’s it! So simple, so much flavor and so good!

Ok, I’m making this for Christmas dinner, but I want to make sure I understand it right…I mix the corn in still FROZEN, right? Would it be fine to just use canned corn, drained? If you don’t think so, I’ll get the frozen! Thank you!!
