Okay, I was super proud of this one right here!
One morning, I was asked to bring a meal to someone later that night, so I ran to the grocery store and bought the ingredients for Andrea’s Pulled Pork and then a few more ingredients to make a quick dessert. Well, well, well…this pie could not have been simpler and it was so yummy too (I made two, one for them and one for us!). It’s not even a recipe…it’s just assembly. My Peppermint Oreo Ice Cream Pie tasted like Christmas, looked like Christmas and will perfect for you to make this Christmas. You’ll love it!
This recipe made two ice cream pies.
Shopping List
2 pre-made Oreo crusts (found on the baking aisle or you can make one from scratch with this recipe)
1 (half-gallon) carton of peppermint ice cream (see below for a substitute)
1 package of Winter Oreos (they have a red filling)
1 package of Mint Oreos (they have a green filling)
Reddi Whip or some other whipped cream to garnish
Set out your two pie crusts.
Next, either allow your ice cream to thaw a little in the sink or place it in the microwave for about 45 seconds to get nice and soft (not melted!). Spoon your ice cream into a large mixing bowl. Next place about half of your red Oreos and half of your green Oreos into a large freezer bag, seal and then take a skillet or something else heavy and lightly bang it against the freezer bag to crush your cookies into big chunks. Open the bag and pour the crushed up Oreos into your ice cream. Using a wooden spoon mix everything together. Then fill your two pie crusts with this ice cream mixture. Cover and freeze at least 3 hours (or longer!!). When you’re ready to serve, you can remove the pie from the fridge and garnish with a little Reddi Whip and perhaps a few more pieces of crushed up Oreos.
So easy, right? You just assemble, freeze and serve!
Now, I was prepared to make my own peppermint ice cream if the supermarket didn’t have any (but thankfully, they did). You would just add about a teaspoon of peppermint extract and a few drops of red food coloring to vanilla ice cream that had been thawed a bit. Easy!
So, if you need a quick, simple, festive and delicious dessert right now…here you go :). And of course, you can use half of the ingredients and make one pie instead of two.
