Mmmmm…my Citrus Coffee Cake for your weekend. I used a jar of orange marmalade and some lemon juice and zest to really brighten this up. All you need on the side is a cup of coffee. Enjoy!
This recipe serves 8 to 10.
1 cup of sugar
1 cup vegetable oil
2 cups of all purpose flour
1 teaspoon baking powder
about 2 tablespoons of lemon zest
about 2 tablespoons of lemon juice
1 (12 oz) jar of orange marmalade
Preheat oven to 350 degrees.
Grease (I used Pam) a 9×13 baking dish. Set aside.
In a mixing bowl, beat your sugar and oil together with an electric mixer. Next, beat in each egg one at a time. Beat in flour and then beat in baking powder. Stir in your lemon zest and lemon juice (one big lemon should give you enough for both!).
Spread half of your batter across your prepared baking dish. Next, open your marmalade and drop spoonfuls of it across the batter (don’t worry if it doesn’t spread evenly). Then, take the other half of your batter and spread that out over the top of the marmalade. Finally, take a knife and carefully swirl everything in the baking dish together.
Pop your coffee cake in the oven and bake about 35 to 40 minutes or until just lightly browned on the edges and a toothpick inserted in the middle comes out clean.
Remove from oven, cool just a minute and then serve either warm or room temp.
