Mmmmmm. We have risotto at our house all the time! I don’t call it risotto (because my kids would never eat anything with a weird name like that!), so I call it fancy rice 🙂 . And they all love fancy rice. This Mushroom Risotto comes together in 30 minutes. That’s it! So simple, so good and it’s meatless. A little Meatless Monday for you.
Speaking of things my kids love, my Crispy Chicken with Poblano Sauce. Now, really only two of the kids eat the poblano sauce (and Andrew and me!), but all of the kids adore the crispy chicken (two like it with ketchup)…so make the chicken and the sauce and try it out on your peeps too!
Just say yes to my Taco Chili. You’ll have zero regrets.
There are a handful of recipes that just scream January to me…and Chicken and Dumplings is one of them.
Mexican Meatballs to round out your week! Loads of flavor in your supper (without a lot of heat!).
My Berry Cherry Rhubarb Cobbler blows my mind every single time! Oh friends…this is so good! All you need are cozy sweats, a great show to binge on Netflix and a bowl of this and you have the perfect evening.
And your weekend needs my Quick & Easy French Toast. So. Darn. Delicious!

I make that Taco Chili every other week in the winter. It is probably one of my favorite recipes and so easy too.

Got to try the cobbler! Question–the mushroom risotto looks SO GOOD! If we DID want to add a meat, do you have a suggestion? Toss in some chopped cooked chicken breast at the end? Ground beef?

I would either brown up some sausage before you begin and leave it in the skillet and proceed with the rest of the recipe or I would add some already cooked and chopped chicken to the skillet toward the end of the recipe just to heat it through. You could do ground beef…but I think sausage would be better.

I would add in some sausage (or ground beef) before you did the first step and then just proceed with the recipe with the browned meat in the pan or add in chopped, cooked chicken when you add in the mushrooms.
