This breakfast casserole has everything I love in the morning: sausage, egg, cheese and hash brown potatoes. It’s hearty, bubbly and oh so good! You should really make it this weekend.
This recipe serves about eight.
Shopping List
1 pound of breakfast sausage (you can use pork or turkey)
1 onion, chopped
2 cups of shredded Cheddar cheese
4 cups of diced frozen hash browns
6 eggs
1/2 a cup of heavy whipping cream
salt and pepper
Preheat oven to 375 degrees.
Grease a 9×13 baking dish (I uesd Pam).
In a large skillet over medium-high heat, brown your sausage until it is browned and crumbly. Next, add in your onions and saute a few minutes until they’re tender. Next, stir your cheese and hash browns right inside the skillet along with a big pinch of both salt and pepper.
In a small bowl, whisk together your eggs and heavy whipping cream. Add half of your cheesy sausage mixture to your prepared baking dish followed by half of the egg mixture. Repeat one more time.
Bake uncovered about 40 to 45 minutes or until slightly browned around the edges and the eggs are set in the center.
Remove from oven and allow to sit for 10 minutes before slicing and serving.
You’ll make it once and then make it many more times after that. So easy and good!
