I mean…it’s everything wonderful inside one breakfast casserole. And bonus, it’s easy too! Make this for breakfast, brunch or even dinner! Just promise me that you’ll make it.
This recipe serves six to eight.
Shopping List
1 box of Caesar style croutons (I like the Texas Toast ones)
1 pound of breakfast sausage, browned and crumbly (I used Owen’s)
6 eggs, lightly scrambled
2 cups of milk
2 (4 oz) cans of chopped green chiles
about 3 tablespoons of snipped chives
2 cups of shredded cheddar cheese, divided
Preheat your oven to 350 degrees.
Grease (I used Pam) a 9×13 casserole dish.
Pour your croutons across the bottom of your casserole dish. Next, place your browned sausage down over the croutons. Set aside.
In a bowl, whisk together your eggs, milk, chopped green chiles, chives and one cup of cheddar. Pour this egg mixture down over your bread and sausage. Sprinkle the rest of the cheddar down over the top.
At this point, you could cover and refrigerate overnight or you could immediately pop it in the oven.
This casserole bakes uncovered about 55 to 60 minutes.
Remove from oven and allow to sit about five minutes before cutting into squares and serving.
Mmmmmmm! This casserole is so good! Your friends and family will love it!

The boxes/bags vary a bit and it really doesn’t matter. Whatever you grab will work!
