Today’s recipe was a winner at my house!
One of my favorite meals in England is fish & chips with a side of mushy peas (basically they’re smashed green peas). So, I decided to marry that yummy idea with a little Tex-Mex and made Grilled Cod (instead of their fried) with Avocado Pea Mash. The result? Devoured! By the way, my guacamole loving children didn’t even notice the peas inside 🙂 . Fire up the grill and make this tonight. I promise you…it’s a real winner!
This recipe serves four.
Shopping List
4 pieces of cod
about one tablespoon of Old Bay Seasoning
salt and pepper (we love Kosher or sea salt)
2 cups of fresh or frozen (but have been defrosted) peas
2 avocados, seeds removed and scooped out
1 jalapeno, chopped (remove the ribs and seeds for less heat)
about a tablespoon or so of fresh lime juice
1 red onion, chopped
Preheat your outdoor grill or indoor grill pan to medium-high heat.
Meanwhile, take each of your four pieces of cod and sprinkle down the Old Bay (just a little bit on each one) both front and back. Next, add a nice pinch of both salt and pepper to each filet. Grill up your cod about 4 minutes or so on each side (they’ll grill up quickly!). Meanwhile, make your avocado mash. In a bowl, place half of your peas inside along with your avocados, jalapenos, lime juice and pinch of salt. Using two forks or a potato masher, mash up this mixture until it’s the texture of guacamole. Once it’s reached the desired consistency, stir in your remaining cup of peas. Test for more salt.
To serve, plate up your grilled cod with a big dollop of avocado pea mash right on top followed by chopped red onion.
Now, that is a winning recipe for sure!
