We grilled some shrimp. We grilled some pineapple. We made a little avocado mash. Added a touch of aioli. And put everything on tortillas. And dinner was done!

This recipe serves four.
Shopping List
1 pound of cooked and deveined shrimp (fresh or frozen that has been thawed out)
2 tablespoons chili powder
salt and pepper
1 fresh pineapple, cut into 4 or 5 large pieces (the bigger pieces make it easier to grill)
2 avocados, chopped into small pieces
Kosher or sea salt
1 red onion, chopped
shredded red cabbage
store bought aioli, to garnish
the zest and juice of two limes, to garnish
8 corn tortillas (or we used the 16 of the small street taco style tortillas)
In a large bowl, add in your shrimp. Make sure the shrimp is pretty dry (I’ll blot it with a paper towel if it’s too wet). Sprinkle in your chili powder along with a pinch of salt and pepper. Toss the shrimp until they’re all coated.
Next, preheat your indoor grill pan or outdoor grill to medium-high. If your grates are too large for shrimp (they’ll fall through), then use a grilling basket. Spray your grate or your grilling basket quite liberally with cooking spray so the shrimp won’t stick.
Add shrimp to the grill and grill up a few minutes either side (it only takes about 3 minutes per side). At the same time, lay your large pineapple pieces across the grill and grill them about 3 or 4 minutes too (flipping them over halfway). Remove both the shrimp and pineapple from the grill and assemble your tacos. Take your avocado pieces and mash them using a fork with a pinch of sea salt to make a little mash. Also, cut your large grilled pineapple pieces into smaller chunks. Then assemble: tortillas, cabbage, avocado mash, shrimp, pineapple, aioli, chopped red onion and then a little lime zest followed by a squeeze of fresh lime juice.
That’s it! Everything comes together so quickly with this supper!
There are so many flavors but not a lot of effort! And I found yummy aiolis (we used a garlic one) right on the condiment aisle next to the mustard and mayonnaise.

I usually hate pineapple toppings – think pizza with pineapples – but pineapple and shrimp are always a great combination. I don’t know why but they work together so well! I’ve never tried them together in a taco form, just in skewers, but it sounds like a great idea!

Also – this is off topic but I’m wondering if you can do a post about food/meals you make for big groups? We do a lot of. Cottage weekends with friends so would be good to have some ideas for bigger group meals when potluck isn’t the best option. Thanks!
