When I think of back to school…I always think of peanut butter. Is that weird? Or do you do that too??? These little Peanut Butter Bites are only THREE ingredients and bonus, THEY’RE NO BAKE! Bam! The perfect little lunchbox or after school treat.
Happy back to school season!
This recipe makes a dozen balls.
Shopping List
1 cup of creamy peanut butter
1½ cups old-fashioned oatmeal (even quick-cooking works here!)
½ a cup of butterscotch chips
In a mixing bowl, combine your peanut butter, oatmeal and butterscotch chips. Roll into balls and place on a plate. When you’re done rolling, pop these yummy balls into the freezer for at least an hour (up to a week). Remove and enjoy cold.

This may be a no-brainer but I am really not sure….do you cook the oatmeal first? I would really love to make these!

I never thought about throwing these into the kids’ lunch boxes. Awesome!

Looks delish! Schools here have all banned peanut butter because of allergies. Are your kids allowed to take real pb to school?
Mix and Match Mama says
Yes! They cannot have it in the class but in the cafeteria.

They are even better with some honey added. I also add Juice Plus powder to mine for protein.
Caroyn says
How much protein powder do you add? Thanks.

These are one of my favorite snacks! I “mix and match” dark chocolate chips in place of butterscotch chips! 🙂 Thank you for sharing not only your yummy recipes but also your heart with your readers!
Patricia says
I think I will try these with chocolate chips and walnuts.
Mary says
Do you think this would work with peanut butter powder?
Mix and Match Mama says
It might…I haven’t tried it with that before.
