Beef & Rice Skillet Supper

Beef & Rice Skillet Supper

So this little recipe was a BIG HIT at our house!!  Annnnnnd it was super simple to whip up (and it was an easy clean up too!).  Bonus, it’s a One Pound recipe too which means if you prefer ground turkey to ground beef, just swap it out.  Everyone will love this at your table!  Enjoy!!

This recipe serves four.

Shopping List
1 pound of ground beef
Extra Virgin Olive Oil (EVOO)
salt and pepper
1½ tablespoons cumin
1 teaspoon garlic powder
2 tablespoons Worcestershire sauce
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, chopped
1 (8 oz) can of tomato sauce
1 (10 oz) can of Rotel tomatoes (or diced tomatoes if you can’t find Rotel)
4 cups of cooked and ready to eat rice (we used brown rice)
1½ cups of frozen or fresh corn
1 cup of shredded Cheddar cheese
chopped cilantro to garnish, optional

In a large skillet over medium-high heat, brown up your ground beef in a drizzle of EVOO.  Once browned and crumbly, add in a big pinch of both salt and pepper followed by your cumin and garlic powder.  Next, stir in your Worcestershire sauce followed by your chopped bell peppers, onion, tomato sauce and Rotel.  Reduce the heat to medium-low and stir everything together and allow to simmer about 5-8 minutes.  Stir your cooked and ready to eat rice right inside the skillet along with your corn.  Next, sprinkle your cheese across the top and give it just a minute to begin to melt.  Remove from heat and sprinkle with cilantro before serving.

That’s it!  So simple, right?  And only one pot to clean after dinner.

Hi Shay. I am looking for a healthy snack for during the day at work, preference would be no-bake. Do you have something in mind that you can share the link please?

I swear I see corn in that skillet, but it isn’t listed in the recipe. Are my eyes deceiving me or was it left out?

      Urg! Typo! Fixed it :).

Hi, I am just wondering if you drain the meat after it is browned or do you just keep going? Thanks!

    • Mix and Match Mama September 19, 2017 at 12:11 pm

I don’t because I use really lean ground beef. You could if you wanted to though!

  • Jocie September 19, 2017 at 11:14 am

Love this! Question for you: Have you heard of the instant pot? Have you used it?

    • Mix and Match Mama September 19, 2017 at 12:11 pm

I have and I have not. My friend Courtney is obsessed with hers though!

    This would make a yummy taco/burrito/nacho filling/topping!

I love this recipe, I tend to keep pre-cooked brown rice on hand in the fridge or freezer for meals just like these.

I made this skillet last night and didn’t see the corn till later but I just substituted black beans. That was one of my favorite recipes of yours by far! Love all the simple recipes you have!! Thank you from a Pumpkin loving Minnesota gal😉

Made this yesterday for the fam! For some reason I was out of cumin so I substituted with chili powder. Everyone enjoyed the flavours… and it was easy! Thank you!
