The other day, I made Mini Pecan Pies for your Thanksgiving (or Christmas!). I loved these because they only took minutes to assemble and bake plus, I don’t know about you, but on a holiday buffet table, smaller little dessert bites typically go faster than big pieces of cake or pie. Plus, no plates required if you’re serving cocktails and appetizers and want something sweet but tiny. It’s a win-win this holiday season!
This recipe makes about 2½ dozen.
Shopping List
1 1/2 cups chopped pecans
3 eggs, lightly beaten
1/2 cup sugar
1/2 cup brown sugar
1 cup light Karo Syrup
1 teaspoon vanilla
3 (12-count) boxes of mini puff pastry shells (found in the freezer department)

Preheat oven to 350 degrees.
Lightly spray a cookie sheet with cooking spray. Set aside.
In a clean skillet over medium-high heat, toast up your pecans just a minute or two. Remove from heat.
In a large mixing bowl, combine your eggs, sugar, brown sugar, Karo Syrup and vanilla with a spoon. Stir in your toasted pecans. Spoon about a tablespoon or so of the pie mixture into each puff pastry shell and place on your prepared cookie sheet. When they’re all filled, pop the sheet in the oven and bake about 10 minutes.
Remove from oven and allow to cool a minute and either serve immediately warm or room temp. Store in an airtight container when not enjoying.
