Meatloaf is Andrew’s very favorite supper. If I ever ask him what to make for dinner, that is always his answer. His favorite is my Mom’s Meatloaf, but he also likes my Mexican Meatloaf too. The other night, I put an Italian spin on our classic recipe and it was a hit! If you’re looking for an easy ground beef supper to make tonight…look no further than here! We served ours with some cooked elbow noodles and a big salad. Dinner was done!
This recipe serves 6 to 8.
Shopping List
2 pounds ground beef
1 cup of breadcrumbs
1/2 cup grated Parmesan cheese, plus more for garnish
2 eggs, beaten
1/2 a large onion, grated (I used a cheese grater)
3 garlic cloves, chopped
1 (8 oz) can of tomato sauce
2 tablespoons Italian seasoning blend
1 (24 oz) bottle of your favorite spaghetti sauce
chopped parsley to garnish, optional

1 (24 oz) bottle of your favorite spaghetti sauce
chopped parsley to garnish, optional
Preheat oven to 350 degreesGrease (I used Pam) an 9×12 baking dish. Set aside.
Combine ground beef, breadcrumbs, Parmesan cheese, eggs, your grated onion (I just grate the onion right over the bowl with my cheese grater), garlic cloves, tomato sauce, and Italian seasoning blend in a large mixing bowl. Pour mixture into prepared baking dish and bake 30 minutes.
Once 30 minutes is up, top meatloaf with your spaghetti sauce and return to oven for 10 minutes.

This is one of our absolute favorites too but I make it just a little differently. I mix in shredded mozzarella and half a jar of pizza sauce and then top with pizza sauce. I think maybe we will have this tonight as your post made me hungry for it!!

You would probably put it in an 8×8, correct? I would do 20-25 minutes and then add the sauce for another 5 to 10.

Question – since your ground beef is mixed in and cooked, and the fat isn’t drained, what percentage of beef do you usually buy? The same every time or depends on the recipe? I’m always flummoxed at the grocery store between 80%, 85%, 90% lean beef labels and never know what to get. 🙂
