It’s Meal Planning Monday! Raise your hand if you’re ready for all the grilled food?! I AM! Our weather keeps being fickle, so I’m still inside cooking, but trust me, the minute it levels off, I’m on the patio grilling up something every night. In the meantime, here are some yummy recipes to make while we enjoy our spring. Happy Monday! xo
My Pulled Pork Chili is THE BEST! You should make this with my Broccoli Cheese Cornbread. Seriously.
My BBQ Pineapple Baked Chicken Tacos are a super fun twist on Taco Tuesday! Loads of flavor your whole family will love!
Crab and Corn Chowder. Two of my favorite things in one yummy recipe. Bonus, it’s super simple.
Ah! Pasta night. Sausage & Eggplant Pasta will make your Thursday night super tasty!
Have you made my Mexican Meatloaf? It’s like a taco but baked like a meatloaf. This is such a good weeknight supper!
Looking for something sweet this week? How about this…
…my Blueberry Banana Pie. Because I love pie.
And maybe something for breakfast too? Try this…
…Zucchini Bread. Just add coffee.
That’s it for today. See you guys tomorrow! xo

Happy Monday, Shay! ❤️ Pulled pork chilli is always a great choice! 🙂 Especially since the weather is crazy hot one moment, and cold one moment where I live. It’s cold now!

Speaking of grilling…what kind of grill do you have? And would you recommend it? We are in need of a new one & I don’t know what to get! Thanks!

That’s a good question! We have a Traeger smoker…but I need to check and see what the grill is.

Yum! These all look so good- we love your baked taco recipes around here! For the crab and corn chowder, can you use canned crab?

I tried making the BBQ Chicken Tacos. Question for you- how do you keep the bottom of the taco shells from falling apart after baking? I reduced the amount of liquid I used in the chicken mixture (drained the pineapple and used less BBQ sauce), but still enough liquid was released when I baked them that the bottom inch of my taco shells were mushy. These tacos have great flavor, but I want them to remain crispy. Any suggestions?

They don’t remain crisp when you bake them. I can plate them up without falling a part, but they don’t stay crisp.
