Happy Monday!
This is my one and only post today…because me and two of my girls had the best time in Boston over the weekend…but that means that today, I have to play catch up. You know…return all those emails and do a bunch of laundry. Lots of pics to come about our trip to Boston…but in the meantime, I have five simple suppers, a sweet treat and lunch idea too.
Grab your paper and pen and get ready to jot down your meals for the week!
Sausage & Kale Risotto is one of my favorite things to make during spring. It’s cozy and comforting while being light at the same time. Plus, risotto is a cinch to pull together!
Want a fun spin on Taco Tuesday? Try my Greek Tacos!! It’s also a great way to incorporate more ground turkey into your diet.
My Chicken & Wild Rice Soup is really easy to whip up on a busy weeknight and always a crowd pleaser.
When was the last time you had a Meatball Sub for supper? How can your day not end on a good note with one of these?!
Wrap up your week with my Spinach Chicken Enchiladas. Don’t they look so good?!
And for something sweet this week…
And what about lunch? I love making this at the beginning of the week and enjoying it for lunch…
Have a wonderful start to your week!! Sending much love from my home to yours!

I looked up all your pasta salads last week so I can make one each week for my lunches this spring/summer! I will start in May since we woke up with snow again today! 🙁

The recipe says to drain and reserve water…then I don’t see the reserved water used. Did I miss something? This sounds delish!
