‘Tis the season for “all things grilled!”.
Today, I’m sharing my BBQ Apricot Grilled Chicken. Fire up the grill, throw it on and just like that, dinner is done 🙂 .

This recipe serves about 4 to 6. I like to make my marinade in advance and let my chicken sit anywhere from 1 hour to 4 in the fridge.
Shopping List
4 chicken breasts
¼ cup Extra Virgin Olive Oil (EVOO)
½ cup BBQ sauce (we used Sweet Baby Ray’s)
3/4 cup apricot preserves
the zest and juice of one lime (about 1 tablespoon each)
Salt and Pepper
First up, make your marinade. I add my chicken breasts to a large baggie and then add the ingredients inside. Add in your EVOO, BBQ sauce, preserves and lime juice, zest and a pinch of salt and pepper. Seal up your baggie and place it in the fridge until you’re ready to grill.
When you’re ready, preheat your outdoor grill or indoor grill pan to medium-high heat.
Remove the chicken from the bag and discard the marinade. Grill up the chicken about 8 minutes or so on each side.
Remove, plate and serve with your favorite sides (like a loaded baked potato).
Easy as that!

I have this recipe and it is delicious! But I am curious how you get your potatoes to look like that? The jacket looks perfect, crisp but not too crisp and do you mash the inside? Are they twice baked or regular baked? They look great!

I typically microwave them about 8 minutes and then put olive oil all over the outside before putting them in the oven to finish baking (400 degrees about 20 minutes). Microwaving them first makes them soft inside before you start baking.
