Here’s the thing…I’m obsessed with smoked Gouda. I’ve put it in Chicken Enchiladas, little sausage cups and even a pasta salad. Today, I’m putting it in my burger. Like, literally in the patty. The cheese melts in there and when you bite into it? It’s heaven. I like pairing the smokey cheese with tangy dill pickles, Dijon mustard and caramelized onions, but you top yours however you like.
Fire up the grill and those these one!
This recipe makes four (half-pound) burgers.
Shopping List
2 pounds of ground beef
Extra Virgin Olive Oil (EVOO)
about 2 tablespoons of your favorite steak seasoning
2 tablespoons Worcestershire sauce
1½ cups shredded smoked Gouda cheese
1 onion, chopped to garnish
lots of salt and pepper
Dijon mustard to garnish, optional
chopped dill pickles, to garnish
4 burger buns
Preheat your outdoor grill or indoor grill pan over medium-high heat.
In a mixing bowl, combine your ground beef, a few drizzles of EVOO, your steak seasoning, Worcestershire sauce and grated cheese together. Divide this mixture into four sections and make four patties (make sure to press down each patty a little in the center to avoid the “burger bulge” when they grill).
Add your burger patties to the grill and begin grilling (we do about 6 minutes or so each side). Meanwhile, saute your onion in a skillet over medium-high heat with a drizzle of EVOO and a big pinch of both salt and pepper. Continue to let the onion saute until you’re ready to top the burgers.
When your patties are done, remove from the grill and assemble your burgers: burger bun, cheesy patty, Dijon mustard, caramelized onions and chopped pickles.

I grew up on stuffed burgers. In south Chicago, we had a butcher that made them. Stuffed with cheese, onions, & mushrooms. Or bacon, onions & cheeses. Jalapenos, onions & cheese…etc..they are good, but filling.
When we make them, we always freeze for 20-30 minutes before grilling to ensure they hold together.

YUM!!! Worcestershire sauce is a MUST for every single burger I make! If we’re not grilling them, I’m cooking them in the pan, and, to the drippings in the pan, I’ll add some Worcestershire and some yellow mustard! Fry up the burgers in it until they’re brown on both sides, and then throw them in the oven to cook for about 20 minutes or so! MMMM!!! My family loves Gouda!
