Friends, this isn’t even a recipe…it’s a reminder that dinner can be sooooo easy!
I would say that any sort of pasta, Sloppy Joes and Tacos are the BIGGEST hits at my house. All four kids get excited about them, they all eat every bite and I don’t hear complaints (which I consider a victory with four kiddos). Sometimes, I whip up taco meat (with black beans!) and instead of piling it into shells, we pile it on brown rice, add our toppings and BAM! Dinner is done. We need easy victories like that during the school year, right? Happy taco night!
This recipe serves four.
Shopping List
1 pound of ground beef
Extra Virgin Olive Oil (EVOO)
1 (1 oz) packet of taco seasoning
1 (15 oz) can of black beans, rinsed and drained
about 3 cups of rice, cooked and ready to eat (we use brown rice)
your favorite salsa
guacamole (we love Tab’s Guacamole)
1 red onion, chopped
shredded cheddar
In a skillet over medium-high heat, brown up your ground beef in a drizzle of EVOO. Once it’s browned and crumbly, stir in your taco seasoning and your black beans. Let the meat and beans heat up just a few minutes and then you’re ready to assemble. In your bowls, add in brown rice to each one followed by your black bean and beef mixture followed by your toppings (salsa, guacamole, chopped onion and cheddar). Just like that, dinner is done!

I don’t use a rice cooker and for regular old brown rice, I typically get Uncle Ben’s.

YES!!! Sometimes, I make it and serve it over that lentil and zucchini pasta too!

The taco bowls are a genius idea! Just a heads up, Trader Joe’s has a tasty and super easy frozen organic brown rice. Pop a bag in in the micro for three minutes and its done!!
