    I love themed weeks and nights too! It makes meal planning so much easier. I tend to find it easier to structure my dinners when they already have a set rule. More fun too! 🙂

    You are SO RIGHT on the baked tacos. I did that after reading one of your recipes maybe a year ago and have done it ever since! I am totally going to make that chicken taco recipe this week…yum!!! And those avocado/egg/bacon waffles look awesome; great idea. 🙂

    I tried the baked tacos once and I LOVED the flavor, but they fell apart at the bottoms, I think too much moisture? I used a crock pot shredded chicken – maybe just too much extra juice left?

      They’re soft for sure! Reduce the amount of liquid next time and try again. Try with ground beef!
