Every Texas girl has a Chicken Spaghetti recipe in her repertoire. This one uses a pound of that Perfect Chicken so that at the end of the day, all you need to do is assemble and bake.
This recipe serves four to six.
Shopping List
1 pound of our Perfect Chicken
1 (10 oz) can of Rotel tomatoes
1 (4 oz) can of chopped green chiles
1 (16 oz) box of Velveeta cheese, cut into cubes
2 tablespoons of chili powder
1 pound of cooked spaghetti noodles
chopped cilantro to garnish
Preheat the oven to 350 degrees.
Grease a 9×13 baking dish with cooking spray and set aside.
In a large pot over medium-high heat, add in your chicken, Rotel, green chiles, Velveeta and chili powder. Stir the mixture until the Velveeta melts. Once melted, add in your cooked pasta and toss everything together. Pour this mixture into your prepared baking dish and then place in the oven.
Bake about 20 to 25 minutes or until the edges are lightly browned and cheese is bubbling. Remove from oven and serve with a sprinkle of chopped cilantro.
