Anytime I have an appetizer party at my house, I always like to include a few hearty ones…for Andrew’s sake. I can eat a meal made of nothing but cream cheese based dips, but my sweet husband is hungry if there isn’t at least one app with some substance. So, party meatballs are always one of my go-tos. This year, I made Chipotle & Pomegranate Meatballs! A little heat, a little sweet and a whole lot of yumminess in each bite! The best part about party meatballs is that they’re prepared in the slow cooker, so you add them in, cover and let them hang out until the party starts. Easy as that!
Shopping List
24 frozen meatballs (I used an all white meat turkey meatball)
1 (16 oz) bottle of Pom juice
2 cups of your favorite BBQ sauce (I used Sweet Baby Rays)
1 can of chipotles in adobo sauce (I used three chipotles and 1 tablespoon of the sauce)
chopped cilantro to garnish
Pomegrantie arils to garnish, optional
In your slow cooker, add in your meatballs followed by the Pom juice, BBQ sauce and three chipotle peppers finely chopped along with a tablespoon of the sauce. Cover and cook on high for about an hour or on low for about 3 hours. When you’re ready to serve, you can remove the meatballs and garnish them with some chopped cilantro and Pom arils.
If you’re looking for a quick supper, this is delicious over rice as well!
