Kensington is loving being more independent in the kitchen and one of her favorite things to do is make easy dessert recipes. While we were on our ski vacation, she made us this Blackberry and Peach Cobbler recipe twice. Last week, she wanted to make a lemon pie, so we made this one! I assisted just a little with the food processor, but other than that, she made it entirely herself. We enjoyed it for dessert two nights in a row. Creamy, lemony and full of that citrus flavor that’s so popular this time of year.

This recipe makes one pie.
about ½ cups of crushed Golden Oreo cookies (about 20 or so)
6 tablespoons of melted butter
1 (3 oz) box of instant lemon pudding
1 (14 oz) can of sweetened condensed milk
1 cup of milk
1 cup whipped topping (I used Cool Whip)
the zest of one lemon, plus a little more for garnish

This looks soo yummy! I love that Kensington made it by herself.
My girls LOVE being in the kitchen and having that independence too! In the past I’ve let them each completely plan one dinner per week from start to finish. They find the recipe, make the list, have their own basket at the grocery store, and cook it all up all on their on. I only step in when needed. I think the knowledge and confidence to make their way around the kitchen is such a great tool for them to have as they grow.
We will definitely be trying out this pie in the very near future!
