This year, I thought I’d share a little Cinco de Mayo Menu with you!
We typically don’t need a holiday to eat Mexican food around here, so please, feel free to use this menu any day of the year. Loads of yummy flavors, all easy recipes!
Happy (almost) May 5th to YOU!
Um, this is EASY! If you want a simple little twist on a margarita, try my Margarita Floats!
For an appetizer, these Bacon Wrapped Jalapenos are DIVINE!
Also, it wouldn’t be a Mexican dinner at our house without queso and guacamole!
For an entree, I have several choices…
…Baked Chicken Fajita Tacos (best of both worlds!)…or…
…Flank Steak Tacos with a Creamy Slaw or…
…my Chicken Enchiladas Verdes!
Finish up with my Strawberry Margarita Ice Cream Pie!
