Caprese Salad with Toasted Croutons

Mmmmmm…this isn’t even a recipe, it’s just an idea.

I get asked all the time what sides we eat with all of our suppers, and this salad right here is the most popular one this summer.  What’s not to love?  Sliced tomatoes, basil, sliced mozzarella (sometimes, we use feta instead) and toasted croutons.  Drizzle on some EVOO and balsamic and you have the perfect side!  Easy as that.  (Like I said, just a reminder, not really a recipe 🙂 .)

This recipe makes as much or as little as you like.

Shopping List
whatever bread you have at home, we use a great crusty whole grain bread, cubed
Tomatoes, sliced
fresh mozzarella cheese, sliced
fresh basil
Extra Virgin Olive Oil (EVOO)
Balsamic Vinegar
salt and pepper

Preheat your oven to 400 degrees.

I just take my cubed bread and place it on a baking sheet and then pop it in the oven for 8 to 10 minutes.

Meanwhile, slice your tomatoes and then layer them with your sliced mozzarella (or feta!) and basil.  Add in your crunchy croutons and then drizzle everything with some EVOO and balsamic.  Add in a little pinch of salt and pepper and you’re ready to go.

Side note: I often order this salad at one of my favorite restaurants on our town square and they add pepperoncini to it.  Amazing.

    I love the addition of croutons! With the tomatoes it reminds me of a Panzanella salad – my favourite. Smart recipe! 🙂

    This looks delicious. I made your regular Panzanella salad last week, and we all really enjoyed it. Turns out my red wine vinegar was expired, so I used white wine vinegar instead and it worked well. Thanks for the recipes.

    Love this! Please post more side dishes… I LOVE all of your entree recipes but struggle in the side dish section!
