Eeeks! I’m really excited to share this with you because it was a fun thing for my kids this week!
On Wednesday morning, a reader sent me some pics and told me I should make a breakfast charcuterie board for my kids…I loved that idea!! I don’t know about you, but things are getting a bit stale over here, so the timing couldn’t have been more perfect. Since the idea was sent to me minutes before breakfast, I had zero time to make anything fresh/fancy/special, but honestly? I think that’s what made it more fun. It was EASY for me and DIFFERENT for them. Win, win.
Here’s what I put on their board…
…grapes, coconut yogurt, strawberries, pancakes, waffles, granola, Nutella, sliced bananas and creamy peanut butter.
Easy as that! I just heated up a few (gluten-free, of course!) pancakes and waffles from Trader Joe’s and then added some of my kids’ favorite toppings along with fruit a little coconut yogurt and granola and bam! Breakfast!

I also thought we’d jazz things up and instead of their normal breakfast at the bar…
…I served it on the dining room table!

Seriously, it was easy, they thought it was so much fun and it was a VERY NICE change up from our normal routine. I’m going to start thinking of other ways to make breakfast charcuterie boards now!!

Did you have any left over pancakes or waffles when doing this? Did you just save them? Would the waffles and pancakes still taste good as left overs?

I only put out what I thought they would eat (based on their normal breakfasts), and only had one waffle left.

This is totally random but I wanted to share ….I think you and your readers will love the book, Next Year in Havana by Chanel Cleeton. The style is very similar to the Beatriz Williams books, Hundred Summers and Secret Life of Voilet Grant. It’s very smart, fascinating, passionate, very strong female leads, it is about life in Cuba under the Castro regime, and there is romance mixed in. I could not put it down along with the follow up book When I Left Cuba. Hope you can check it out! I have loved so many of your book recommendations so far. Also the youtube channel Boho Beautiful is excellent! She shares really good quality pilates and yoga workouts, always with beautiful, exotic backgrounds all over the world and her voice is very calm and soothing while still providing challenging workouts.
