It’s my two favorite things…Buffalo sauce and FRIDAY!
I mean to tell you, I love me some Buffalo sauce.
I love it on a burger, in a side, in a dip, in an appetizer…basically, in anything.
I’ve been telling you guys that lately, my Chick-fil-a game has changed because I’ve been getting their cobb salad with a little ranch and then some of their Zesty Buffalo Sauce. It’s SO GOOD!! It totally jazzes up that salad. So, I wanted to make something kind of similar at home for lunch and thus, this Buffalo Chicken Wrap was born. I didn’t “wrap” mine for the pic, but as you can see, the inside is filled with goodness.
This isn’t even a recipe, it’s just an order of how you should do things to get your wrap on the table in no time flat. We did this twice last week and both times, I thought it was the most delicious (and easy!) lunch.
Here’s what you do…
1: Warm up your wrap (we used Trader Joe’s Gluten-Free). I like to microwave tortillas between two damp paper towels for about 20 seconds.
2: Sprinkle over your lettuce (I used a bag lettuce with mixed greens, cabbage and carrots
3: Add on some sliced cherry tomatoes
4: Add a few pieces of crisp bacon (for easy lunches, I buy the already cooked bacon from Trader Joe’s or Costco and just heat that up in the microwave)
5: Add on your Buffalo chicken. I take the already cooked chicken breast from Trader Joe’s or a rotisserie chicken from my grocery store (any cooked chicken) and add it to my skillet just to heat through a few minutes. I add in Ranch dressing and some Buffalo sauce as I heat (just to your preference!). It’s easier to add more than take away, so start slowly. I let it heat up about four minutes, and it’s done! Add the warm chicken to each wrap before…
6: Topping with shredded cheddar cheese.
