Hello there, Monday!
I think today is a holiday for many of you (since the 4th was on a Saturday), and if it is, I hope you enjoy it! We certainly had a nice weekend! Andrew and I both took Friday off and reallllly enjoyed unwinding (I slept in every day!!!). Plus, it was good to sit down and tackle our house to do list (it feels long and overwhelming right now). Things looked a little different than they normally do here in McKinney, but we were outside, we swam, we ate delicious food, we did the drive through parade, and we relaxed…so, we’ll call that a win 🙂 .

Today, I think they’re coming over to hopefully finish the demo and and then from here, we start to put life back together. It’s been two weeks…but I’m hoping the worst is behind us (someone tell me that’s right!!) and moving forward will all be a bit easier (please, lie if you have to…just tell me this!). Andrew Shull is preparing my heart for a longer than expected construction time. I think the estimate now is “if we can get it done before Christmas, that will be amazing”. I’m not sure they understand that I start celebrating Christmas on November 1st. Ha!
Okay, only one post for today, so grab your paper and pen because it’s time to jot down your grocery list for the week. Today, Meatless Monday, Taco Tuesday, Waffle Wednesday, Turkey Thursday and Burger Friday.

My Lemon Parm Pasta is just what you need for a Meatless Monday. And listen, if you’re not into this whole meat-free thing, then throw a few grilled shrimp up on top and you have yourself a delightfully delicious variation!
Our Taco Tuesday has a twist…I took a traditional dish and turned it into a taco. I give you my Italian Sausage Peppers & Onions Tacos.
Your kiddos are going to flip over my Pizza Waffles! These babies are loaded with chopped pepperoni and cheese and then topped with pizza sauce. They’re outrageously delicious!
Mmmmmm…Green Chile Turkey over Quinoa for our Turkey Thursday!
And Fridays in the summer must have a burger, so our Cheddar Beer Burgers should be on your menu at the end of this week.
And our bar of the week…
…Dreamsicle Bars. It tastes just like the ice cream bars you had as a kid.

Lifting your sweet family in prayer. Glad to hear today is the last day of demo. From there starts the rebirth of bringing your house back to life again. That will be an exciting time and one you will come to appreciate each day instead of dreading what you have endured these past couple of weeks. I am praying the new construction proceeds quickly so they can get you back your house as quickly as possible

So glad you were able to relax and sleep in! I am an interior designer and my husband is an architect. We did renovations on half our home while our kids were babies (would NOT recommend 😉 Construction can take longer than expected, for sure. The dry wall installation process is VERY DUSTY (you will want to leave for this part!). I’m just wondering if you could rent a place for a while? It might provide some peace and sanity to be away from the construction, and then you can do the things you normally do (ie. Decorate for the holidays) without much worry. It could be a fun adventure. Hang in there. The good news is that when this is all over, your house will be as good as new and won’t have to deal with this stuff for a really long time. (It IS like giving birth. You conveniently forget the bad parts :). Stay healthy & well rested. Take care.

The good news is that all of the kids’ rooms and things are perfectly fine/not near construction/remodel…so, we hate uprooting them when their little areas are all okay. I don’t know…this whole thing goes against the neat freak/type-A/likes things quiet and cozy person I am. I appreciate your insight and encouragement!!

are you able to cook in your kitchen with all your house stuff going on? Also have you made any of your famous bunt cakes since going gluten free? If so have you just been using the funfetti cake mix but maybe adding baking chocolate to it if you wanted to make a chocolate bunt cake?;)

Hi I have a grocery shopping question for you. Would you buy everything including the meat needed for these recipes all at the beginning of the week during your weekly grocery run? or do you buy half of it in the beginning for the recipes your making earlier in the week and then make another trip to pick up the rest of the stuff you need?

I typically can buy it all since it’s only five days worth. I do like to pop in the grocery store halfway through the week (or Trader Joe’s) to grab anything we didn’t know we needed or anything fresh we have run out of.

Hi, Shay! I just had a quick question about your demo/remodeling- I’m curious if you are planning to redo everything exactly the same, or if you are taking the opportunity to change anything? We bought land about four months ago and are in the beginning stages of looking at designs and building, and I’m so nervous to pick something we won’t end up liking. Again, just curious! I hope you have a great last day of demo!

It’s a bit of both! I think a lot will go back the same (or very similar), but some things will be different. Right now, I’m working my way through my “to do” list and it’s very long (no matter which way we do it!!).

Bless your hearts but you are definitely showing your family how to persevere! Recipe question since I have always made my sloppy joes with Campbell’s Chicken Gumbo soup (which is not available during the pandemic) —what is your recipe? Also, I go to the surgeon Wednesday. Hugs from Waco!

2 years ago we had hot water leak under our house. Luckily, we’re pier & beam so water didn’t come in house. They had to demolish entire 1st floor, warped all the wood floors. Our ceilings were ok. It took 4 months. We did move out, I don’t know how you’re doing it with kids. Insurance rented us a lovely home for three months. The last month we moved back in upstairs & we made it. I did end up with a new kitchen with all new cabinets so that was good! So hope you are back in sooner than later. Bless your heart, you are quite the trooper! Hugs & prayers!

Oh my yes the worst is behind you!! We flooded during Harvey and by far the demo was the worst! We also lived upstairs and it was doable. It took us 8 months to re-build but that was because workers were spread so thin and supplies were limited due to the amount of people that had flooded. I thought my house would never be clean again but it is. I can tell you the Lord was in every detail of our journey and He gave me the perseverance to get through that and I know He will for your sweet family as well. Sending hugs and prayers for you all during this. I know the end result will be beautiful!!!

Neat freaks UNITE!!!! So hard to walk through a construction zone in your own home with that voice in your head on repeat saying “it’s fine. totally fine. I love dust. I love using my washing machine as a kitchen counter. everything’s good.” You know how things never go as expected? Well, that’s goes both ways, and I bet God will provide some unexpected happy surprises through this, too! Praying for you.

I always do! Ha! The funny thing is my dad NEVER calls me Shay. My dad always, always, always calls me Shay Lowe. Always. Catherine only calls Sean “Sean Lowe”. Isn’t that funny?

I really feel like everyone has gone above and beyond to practice the safest precautions. One thing I’ve really appreciated is that the new construction has created an outside entrance as to not have to enter our house until the very end (if that makes any sense at all). We also have zippered “home” areas inside with the flood damage that no workers go beyond, so even with all of these people here, we strangely have our own bubble.

What a mess, but it looks like they are making good progress on your house. We made the Pizza Waffles last night, and they were a hit with our pizza loving family. My 12 yo. ate 3 Belgian sized waffles. It was also nice to not heat up the kitchen with the oven. Definitely a summer keeper! Thanks for sharing.
