On Life Lately today, it’s all about Andrew’s 40th birthday, so I thought I’d pop over here and share his favorite meal with you THREE different ways!
When we did a Q&A last week on Stories, “what’s Andrew’s favorite meal” was one of our most frequently asked questions. The answer has consistently stayed the same now for 17 years…
..it’s MEATLOAF!
My mom has been making THIS RECIPE since for 40 years, and now, it’s definitely a favorite at my house too! Andrew says he loves this recipe more than a traditional one because it’s not Italian-inspired, it’s like meatloaf with a Texas twist. Even if you don’t think you like meatloaf, you should give this one a try 🙂 .
When we became a gluten-free house, this was one of the first recipes I tweaked for my fam…
…and this recipe HERE is just as good minus the gluten!
Now, if you want to get extra fancy, Andrew love, love, loves when I take meatloaf and make it into the Coach’s Stack. This recipe is super old, but I made it just as recently as last Tuesday, so it’s definitely still a fave at our house.
No matter which option you choose (you can even make my Meatloaf Joe’s too!), you should make meatloaf tonight and think of Andrew!

I love meatloaf too but my family doesn’t. whomp whomp haha I used to make a Mexican meatloaf – crushed tortilla chips instead of breadcrumbs, taco seasoning…it is delicious!! Thanks for sharing these recipes. I need to try this out and nudge my family along to try it again!

I’ve made your Coach’s stack SO many times! One of our favorites! When I’m feeling lazy, I use Trader Joe’s pre-made meatloaf (which is surprisingly delicious!). ?

I love it! Whenever you share Andrew stories, or he is on, it is like hearing about my own husband. So similar , even down to their favorite food! My husband loves meatloaf with mashed potatoes gravy and green beans, but basically would eat it anytime, any way;-) I can’t wait to try out your version!

I just made the meatloaf with your recipe and it was such a hit. My husband usually slathers ketchup on everything but not this time. This recipe is definitely a keeper. I also froze the leftovers so I have dinner made again in a few days. Win for me! We camp (glamp in an RV) and I think this would be a great one for the Dutch oven. Thanks again for sharing!
