…after a Trader Joe’s run and told you this is all you need to make our favorite Easy Greek Salad! I had a few of you request that I make this its own post, so here you go. This is absolutely our favorite salad especially in the spring and summer.
When I made it just a few nights ago, Andrew told me to “get it away from him” because he was eating too much of the salad and not enough of the actual meal. Ha!
In 2019…
…we went to Greece with our besties and had one of these salads at least once a day. I swear to you, at one point, we all agreed that we’d never have another meal at home without one. Ha! They are just so delicious! They’re also easy, easy, easy. This is all you do…
1: In a bowl, add in your chopped tomatoes (we prefer cherry tomatoes sliced in half, but sometimes when our garden is in full swing, we’ll quarter nice big juicy tomatoes instead).
2: Next, add in some artichoke halves (drained). If you don’t love artichoke hearts, skip this step. We love them in this salad, so we always add some right from the jar.
3: Dice up a red onion. Yummmmmy! We are red onion people over here! Just add as much or as little as you want!
4: Add in some herbs (whatever you have…oregano, parsley, basil…it’s all great!).
5: Sprinkle on lots of fresh feta cheese! Yes, yes, yes!!!!!!
6: Finally, finish by adding a nice drizzle of both Extra Virgin Olive Oil and Balsamic Vinegar along with a pinch of both salt and pepper.
If you have the ingredients on hand, this is super easy to make for one or make for many.

Shay! Greek Salad is my favorite. We like red pepper, Kalamata olives, avocado, chopped cucumber, and any leftover roasted potatoes -from like the night before, in ours, too. Have you ever tried Trader Joe’s Greek Salad? For $2.99, it has a bit of everything in it as well as a tasty vinaigrette. We use it as is, or grow it with more of the above ingredients I mentioned…depending on what is in season, ripe, and/or what we have on hand, such as extra tomatoes, extra olives, and extra feta. I could seriously eat this every night, too.

I serve it with a million things. Pretty much any entree we make, we can have this salad (grilled foods, casseroles, enchiladas…you name it!).
